Ingredients:

  • 1 box of gluten free crackers (suggested: Glutino)

  • 1 cup of unsalted butter

  • 1 cup of brown sugar

  • 1 bag of semi-sweet chocolate chips

  • Crushed peppermints [optional, but highly recommended for that extra burst of flavor!]

Instructions:

  1. Preheat your oven to 400°F and line a 15 x 10-inch rimmed baking sheet with aluminum foil. Arrange the gluten-free crackers side by side on the sheet until the entire pan is covered.

  2. In a saucepan over medium-high heat, melt the butter and brown sugar together. Bring the mixture to a boil and let it bubble away for 3 minutes.

  3. Quickly pour the hot butter-sugar mixture evenly over the crackers. It may be a bit tricky to spread, so work swiftly before it begins to harden.

  4. Bake the toffee-topped crackers for 7 minutes, allowing the mixture to caramelize and bubble.

  5. Remove the pan from the oven and sprinkle the semi-sweet chocolate chips over the hot toffee. Let them melt for a moment, then spread the chocolate evenly over the crackers.

  6. For that irresistible twist, sprinkle crushed peppermints over the chocolate-coated toffee.

  7. Let the toffee cool and set at room temperature or in the refrigerator for about an hour.

  8. Once chilled, break the toffee into small, bite-size pieces and prepare to indulge in a symphony of flavors!
