Now, let’s introduce the star of the show: our Keto Chocolate Cookies with a Chewy Texture. This recipe is a true delight, offering all the rich, decadent flavors you crave in a cookie, without the carbs.

Ingredients:

  • 1.5 cups Almond Flour

  • 1/2 cup Lily’s Chocolate Chips

  • 1/2 cup butter, melted

  • 1 large Egg

  • 1/2 cup  Monkfruit

  • 1 tsp Baking powder

  • 1 tsp vanilla extract

Instructions:

1. Preheat your oven to 350 and line two baking sheets with parchment paper.

2. Combine the almond flour, Monkfruit, and baking powder in a small bowl and set aside.

3. In a large bowl combine the melted butter, egg, and vanilla extract using a whisk. In two batches add the dry ingredients to the wet and combine.

4. Fold in the chocolate chips. Using a cookie scooper or spoon scoop out 16-20 cookies onto your baking sheets, depending on your cookie size preference!

5. Bake the cookies at 350 for 15 minutes or until golden brown on the top. Allow to cool for at least 20 minutes prior to consuming! Enjoy!
